Sunday:
Ham n' Yams
Slice two large yams into large fries, skin on, and toss with olive oil and salt. Spread on pan and bake at 350 for a half hour. Flip half way through.
Served with uncured baked ham.
Monday:
Guten Free Pizza from Unos Chicago Grill
Yay Uno's!
Tuesday:
Eggplant Ratatouille
1 large yellow onion and 1 large eggplant, cut in 2 to 3 inch strips.
Saute in olive oil. I also added squash.
Add salt and can of Italian seasoned tomato. (or, of course, season yourself)
Add grated parmesan cheese.
Couscous was also served to the gluten eaters.
