Chicken and Chick Pea Rice (definitely original)

I boiled a couple chicken breasts and chopped them in very small pieces.
Then chopped a onion and sauted in olive oil. Added the chicken and added minced garlic and salt.
I cheated and microwaved a couple packs of frozen brown rice.
I mixed in the rice to the chicken and onions and added a can of garbanzo beans, or chick peas.
I microwaved a few pieces of bacon, chopped them in small pieces and added them to the pot. Last, I grated parmesan cheese over the top before serving.
Everyone loved this!

February 15-21, 2010- Trying to Get Back into the Swing of Things

We eat healthier and spend less on food when I meal plan, so I'm trying to jump back into this after a couple lost weeks...

Sunday:

Monday:
Salad
Baked Chicken, Onions, Lettuce

Tuesday:
Pot Roast
Beef, Carrots, Potatoes, Onions cooked all day in the Crockpot

Wednesday:
Wild Rice
Baked Sweet Potatoes
Peas

Thursday:
Wild Caught Salmon, still figuring this out

Friday:
Homemade Pizza, gluten-free

January 31- February 6, 2010

Sunday:
Ham n' Yams
Slice two large yams into large fries, skin on, and toss with olive oil and salt. Spread on pan and bake at 350 for a half hour. Flip half way through.
Served with uncured baked ham.

Monday:
Guten Free Pizza from Unos Chicago Grill
Yay Uno's!

Tuesday:
Eggplant Ratatouille
1 large yellow onion and 1 large eggplant, cut in 2 to 3 inch strips.
Saute in olive oil. I also added squash.
Add salt and can of Italian seasoned tomato. (or, of course, season yourself)
Add grated parmesan cheese.
Couscous was also served to the gluten eaters.
