Then chopped a onion and sauted in olive oil.  Added the chicken and added minced garlic and salt.
I cheated and microwaved a couple packs of frozen brown rice.  
I mixed in the rice to the chicken and onions and added a can of garbanzo beans, or chick peas.  
I microwaved a few pieces of bacon, chopped them in small pieces and added them to the pot.  Last, I grated parmesan cheese over the top before serving.
Everyone loved this!
